Research Statement:  My research focuses on understanding tannin-gluten interactions, so they can be leveraged to expand wheat gluten functionality. Tannins, as from sorghum, are known to complex with proteins which can reduce macronutrient digestibility, allow for targeted micronutrient delivery, and affect rheology of foods.
